St Marys Calne
The people that make up QCM have had a long standing relationship with St Mary's School in Calne. Our service engineers have been maintaining the kitchen since in was designed and installed by Gerry when he worked for Ken Wheeler Catering twenty years ago. It is a testament to the hard work of the engineers, and the selection of quality equipment that the original kitchen served the School for so long.
However, last Summer the School decided that the time was right to modernise. Keeping the same idea, of reliable, quality kitchen equipment with simple work-flows, we were able to enhance both the kitchen and the servery, whilst improving the aesthetic for staff and pupils alike.
We started by completely removing the existing flooring and wall tiles, replacing them with coloured BioClad and Altro safety flooring from Sutton Floors, who also installed a new hygienic suspended ceiling.
Next was the new ventilation system and stainless steel service spine to hygenically enclose all M&E services, a new external walk-in chiller and freezer but with connecting door direct into the kitchen, clad in timber to compliment the picturesque school buildings.
The servery was re-designed with ceran hotplates and drop in chillers, retro styled planked wooden fascia and granite tops, manufactured by CED Fabrications. The counters were highlighted with retro styled brass shades - the look is contemporary, hard-wearing and attractive and will stand the test of time.
The kitchen layout was completely reorganised, by removing an old walk-in chiller into a bakery, with Rational Combi and Vollrath Mixers. This created space in the main kitchen allowing us to install three new Rational SCC 61, 101 and 201 combi ovens. Foster counter fridges at each work station lessens the amount of travel around the kitchen, and a full compliment of Blue Seal Evolution bratt pans, ranges and fryers means that the school can cater for over 800 on a daily basis as well as tackle the multitude of extra catering for functions with ease.
